Osakana // Yuji Ramen/Okonomi
From 2020-21, I cooked at dual concepts Osakana (Japanese fish store) and Yuji Ramen/Okonomi (Japanese seafood restaurant). I learned the art of fish butchery and honed in on plating + food styling techniques. At Okonomi, I partook in R&D for daily rotating sides based on local produce.
